Apple glazed pork chops

This easy one-skillet dinner summons warm memories of camping in Yosemite’s Camp 4 on a cold autumn night. Serve over a bowl of fresh grains or greens and you have yourself the perfect cap to a perfect day.

Ingredients

4 pork chops (1-1½ inch thick)
Salt and pepper, to taste
1 tbsp oil
2 tbsp butter
1 medium yellow onion, sliced
2 sweet-tart apples, pared and sliced
¼ tsp cinnamon
⅛ tsp nutmeg
1 tbsp brown sugar
½ cup water, plus more as needed

Directions

  1. Season chops generously with salt and pepper.

  2. Heat oil on high heat in a heavy-bottomed nonstick frying pan. Sear pork chops 2 minutes each side and 10 seconds around the edge, until a golden brown crust forms. Transfer to a plate.

  3. Turn heat to medium. Add butter and onions and sauté until pale and translucent, about 1 minute. Add apples and sauté another 2 minutes. Mix in cinnamon, nutmeg, brown sugar, and water and wait for the mixture to simmer.

  4. Nestle pork chops into the apples along with any juices. Cover with a lid and simmer gently for 5-6 minutes, adding water if the pan is dry. Serve chops over rice or greens drizzled with the pan sauce.

Tips

  1. If the grocery store only sells ½-inch chops, reduce searing and simmering times by half.

  2. Brining the pork chops for 30 minutes in a salt solution (1 cup water : 1 tbsp salt) before cooking will make them extra tender!
